Vegan Almond Cookies

I made these vegan almond cookies last week and they seemed to be a hit with my friends. These have to be in my top favorite cookies category (which includes cardamom cookies, oatmeal raisin cookies, and cranberry cookies).

Makes 48 cookies (77 calories each)
Ingredients:

  • 2 cups of whole-wheat organic flower
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 4 tablespoons of brown sugar
  • 1 teaspoon of salt
  • 2/3 cup of organic almond butter
  • 3/4 cup of local organic maple syrup
  • 1/2 cup of honey
  • 1 teaspoon of vanilla extract
  • 6 tablespoons of organic vegetable oil
Directions:
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a cookie sheet or use a silicon sheet.
  3. In a large bowl, mix together the flower, baking powder, baking soda, brown sugar, and salt.
  4. In a separate bowl, mix together the almond butter, maple syrup, honey, vanilla extract, and vegetable oil.
  5. Combine both mixtures until you get something of the same texture and consistency.
  6. Using a 1-inch melon-baller to scoop the dough onto a cookie sheet of 4x5 rows.
  7. Bake for 8-10 minutes. Cool completely before packing away.

  1. I realize now that these aren't, in fact, vegan due to the use of honey... I'll have to update that...
