Makes 48 cookies (77 calories each)
Ingredients:
- 2 cups of whole-wheat organic flower
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 4 tablespoons of brown sugar
- 1 teaspoon of salt
- 2/3 cup of organic almond butter
- 3/4 cup of local organic maple syrup
- 1/2 cup of honey
- 1 teaspoon of vanilla extract
- 6 tablespoons of organic vegetable oil
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a cookie sheet or use a silicon sheet.
- In a large bowl, mix together the flower, baking powder, baking soda, brown sugar, and salt.
- In a separate bowl, mix together the almond butter, maple syrup, honey, vanilla extract, and vegetable oil.
- Combine both mixtures until you get something of the same texture and consistency.
- Using a 1-inch melon-baller to scoop the dough onto a cookie sheet of 4x5 rows.
- Bake for 8-10 minutes. Cool completely before packing away.
I realize now that these aren't, in fact, vegan due to the use of honey... I'll have to update that...
